Lychee Sweet Cigar Roll-ups Recipe
Egg roll wrappers are filled with a sweet mixture of lychees,
walnuts, and coconut, then rolled into cigar shapes and fried.
Sprinkle with powdered sugar or drizzle with melted chocolate and
you have a luscious finger food dessert.
INGREDIENTS:
4 cups lychees
12 ounces lychee or orange juice
1-1/2 cups water
1/2 cup sugar
2 tablespoons lemon juice
1 tablespoon quick-cooking tapioca
2 cups finely chopped walnuts
7 ounces shredded coconut
1 package egg roll wrappers
Vegetable oil, for frying
Confectioner's sugar or melted chocolate for decoration
PREPARATION:
Bring lychees, juice, water, sugar, and lemon juice to a boil in a
large saucepan. Boil 1 minute. Turn off heat, cover, and let stand
at least one hour. Drain lychees (reserving liquid) and finely chop
the fruit.
